The Watervale Hotel offers ethical epicurean experiences to visitors to the Clare Valley in South Australia. It’s a beautifully renovated casual country pub with its own guesthouse and a ‘fresh produce to plate’ restaurant.
The hero of the hotel is the organic, bio-dynamic Penobscot Farm managed to permaculture design. It’s a place where regenerative farming techniques are used to bring life back to the soil, to improve water retention and to facilitate carbon sequestration into the earth. These practices also help the experienced chefs deliver even more flavour and nourishment onto the plate. They use a wood fired oven and Argentinean inspired BBQ to enhance food with smoke and flame.
The team also collaborates with the traditional custodians, the Ngadjuri, to develop Indigenous bio-dynamics – an integration of Ngadjuri land management and bio-dynamic principles.
We love the ‘Six Senses Penobscot Farm Tour and Degustation Dinner’ which allows guests to see, hear, touch, taste, and experience the energy of the spiritual farming methods while picking some produce for their meal.
